Scorzonera – Black Giant of Russia Maxima

Scorzonera is very similar to salsify; it has long roots with dark brown skins, and its growing method is identical to that of salsify. It produces heavy yields of very long roots, which are not a pretty to look at but outstanding for flavour. The flavour is regarded by some as superior to that of salisify, and it also has a better resistance to bolting.

This variety is easy to grow and well worth trying. Sow the seeds in batches of 3 seeds at 15cm intervals in April. Thin to single seedlings as soon as possible. Keep weed free and water regularly. Lift roots carefully from October onwards. Can be left in the ground and harvested as required through the winter.
