Salsify – Sandwich Island

Sandwich Island, discovered in the 1860s, has slender, creamy-white roots. Its flavour improves after a frost. This unusual vegetable is also known as the Vegetable Oyster, as its flavour is said to resemble that of seafood.

This variety is easy to grow and well worth trying. Sow the seeds in batches of 3 seeds at 15cm intervals in April. Thin to single seedlings as soon as possible. Keep weed free and water regularly. Lift roots carefully from October onwards. Can be left in the ground and harvested as required through the winter.
