• Sow outdoors in very early spring. Carrots prefer full sun and loose, evenly moist soil amended with plenty of organic matter. Before planting, loosen the soil to a depth of 8 to help the roots grow straight. Thin to the recommended spacing when seedlings have three to five leaves.

• Carefully loosed soil with a garden fork before harvesting. For best flavor, harvest when carrots are 6-7 long. Cut back green tops to 1/2-1 and shake off any soil before storing.
