The initial development of the first purple sugar snap pea in Britain resulted in a rich purple color due to the presence of healthy anthocyanin pigment which acts as an antioxidant. The plant produces attractive bicolored flowers and yields stunning flat, purple sugar snap peas that can be enjoyed raw, in stir-fries, or steamed (although the color may fade when steamed or boiled). It is recommended to harvest and consume them when young, just as the peas start to develop. Additionally, this variety is resistant to powdery mildew and tolerant to downy mildew, allowing for an extended sowing season until early July.
